SALADS

Sweet and Sour Noodles

RECIPE

Cucumber noodles make this dish fabulous!

“Noodle” Salad

1 large, firm English cucumber, processed into noodles using a Veggie
Spiralizer or a Spirooli

1 large mango, julienned (Manila mangos work best)

1 large bell pepper, julienned

1/2 bunch cilantro, finely chopped

1/2 cup mung bean sprouts

1/2 cup pea sprouts

4 kale leaves, thinly sliced

1 handful snow peas (optional)

Sweet ‘n Sour Sauce

2 large mangos, diced

1 large bell peppers

A pinch of cayenne (optional)

First, make the sauce by placing diced mangos then bell peppers in a blender. Add a pinch of cayenne, if desired, then blend until smooth. Next, drain the cucumber noodles in a strainer then arrange them on a plate. Add a layer of sweet ‘n sour sauce. Next, add the julienned mangos and bell peppers. Cover all with another layer of sauce. Add the sprouts and kale then cover with another layer of sauce. Finally, garnish with the chopped cilantro and eat with chopsticks or a wooden fork.

( I just got regualr alfalfa sprouts, omitted the kale and used ground up mustard instead of cayenne)
